The fourth stop on our Passport to Global Flavours is a French-Asian Soirée, where Guest Chef Chris Koo—trained in both cuisine and pastry at Le Cordon Bleu—blends classic French techniques with vibrant Asian flavours for a 4-course feast that reimagines tradition with a creative twist. 

As both a chef and a family doctor, Chris believes that good food is the foundation of good health—wholesome, flavour-packed, and never boring. He even teaches a medical student elective on Culinary Medicine and has led public cooking classes to help people learn how to feed themselves well. Inspired by this philosophy, he has crafted a menu that brings together the best of both worlds, from crispy deep-fried nori parcels and duck à l’orange potstickers to Hainan-style chicken with three signature sauces, all leading up to a decadent bubble tea choux au craquelin—because for Chris, dessert is never an afterthought.
